English Boiled Beef and Dumplings

Another recipe for stew from my mothers cookbook.

Ingredients:

  • 4 lbs chuck roast or rolled brisket
  • 4 - 5 celery stacks with leaves, cut into pieces
  • 6 carrots, peeled and cut into pieces
  • 6 onions, peeled, whole
  • 1 parsnip, peeled and diced
  • 1 small turnip, pealed and sliced
  • 2 tsp salt
  • 3 whole cloves
  • 1/2 tsp pepper
  • 2 bay leaves
  • Dumplings or potatoes (6 - 8)

Directions:

Place meat in large saucepan, cover with water. Bring to boil and boil for 10 minutes, skim the water. Add all vegetables to boiling meat along with remaining ingredients. Bring to a boil then cover and simmer for 2.5 - 3 hours or until tender.
