Pumpkin Cranberry Cookies

This recipe makes about 2 dozen tablespoon sized pumpkin cranberry cookies. The dough for this recipe doesn't spread much when cooking so the cookies have a texture similar to brownies and you don't have to worry about them merging during the baking process. This recipe is also very easy to double or even triple if you are baking in large quantities.

Simple Cookie Recipe

This recipe started off as a chocolate chip cookie recipe; however, I have long since discovered that you can remove the chocolate chips and sub in any number of other items and the recipe makes for a great base. One of my favourite changes is to sub-in maple syrup and walnuts instead of the chips. Anyway, here is the base cookie recipe.
